Extrusion studies conducted at Rutgers University, the staff ran the flour by itself and they were very impressed. It was a single screw, direct expansion. They were getting 3x the expansion. The 3 mm die was yielding 9 mm product. They stated that “it runs as well as rice flour and corn starch. In general, cassava flour can act as an extrusion aid. It can be combined with protein-rich flour which is difficult to extrude.”
